Freshly roasted coffee is something special. The beans contain the full spectrum of aromas and nuances that make the coffee so lively. But to experience this taste in your own home, you need a little more than just fresh beans. After roasting, coffee goes through a natural process: degassing .

Why freshly roasted beans need to degas

When roasting, gases are created in the beans, particularly CO₂. These gases break down slowly in the first few hours after roasting. If the beans were stored in an airtight container immediately, the CO₂ could build up, which could affect the taste. Too much gas in the bean can also disrupt the extraction during preparation and distort the balance of the aromas. That's why we let the beans breathe first - and then we protect them carefully so that the aroma is preserved until it reaches you at home.

Our process: Degassing and storage – simple and effective

To store freshly roasted beans, we use sturdy metal buckets with a special valve that regulates the pressure. This valve is a small but crucial detail. It ensures that CO₂ can escape without oxygen entering, because oxygen is the main reason for the beans to age. Our process looks like this:

1st The first 24 hours – let the beans breathe : Immediately after roasting, the beans remain in the open bucket. This allows the excess CO₂ to escape and the beans to settle a little, which ensures a well-rounded aroma.

2nd After 24 hours - closed storage with valve : We close the bucket and activate the valve, which controls the pressure inside over a longer period of time. The CO₂ can still escape, but oxygen stays outside. This keeps the beans fresh and their aroma is protected.

The effect: Fresh coffee with full aroma

Why is this important? When coffee is exposed to too much oxygen, flavor is lost. Studies show that oxygen accelerates the aging process of the beans, making the flavor flatter and less intense. By degassing in the open state and then storing it in the valve bucket, the beans stay in their best shape for longer - neither too "green" due to residual gases, nor "dull" due to oxidation.
